The fiorged knives are precious knives made following a manufacturing process colled forging, which is made with the hammer, a machine that giving pressure of several tons on 2 molds - among which is places a steel "billet" heated about 1200 Celsius - stamps the piece. From the shape of the metal you obtain the typical shape of the knife: he bolster and the handle. Forged knives are heavier than stamped knives and this is one of the main differences between the two kinds of knives. This is why chefs and experts prefer them for their solid grip and clean and precise cut. Forged knives are more suitable for cutting raw meats, roasts and vegetable of high consistency.
