MIYSM4005 - 115mm, DSR-1k6 Steel, Soft Cheese Knife 

The Shizu Hamono Morinoki SM-4005 is a Japanese cheese knife for soft and medium-hard cheeses. However, the wavy and serrated blade is also great for cutting steak, bread, vegetables and fruit. The sharp point of this knife can be used to pick up pieces of cheese or to remove hard edges. The square handle made from zelkova wood gives the knife its tranquil and natural appearance. This simple and versatile knife is a must-have for any kitchen!

Shizu Hamono Morinoki blade

The blade is made from Daido DSR-1k6 steel. A very strong type of stainless steel. It might not be the toughest type of steel, but that means that the knives are easy to use and easy to sharpen at home.

Shizu Hamono Morinoki handle

The handle is made from one piece of Japanese zelkova wood. A light type of wood, both in weight and colour. The beautiful markings run lengthwise across the handle. This makes it clear that the handle isn't entirely square. The end of the handle is slightly bigger. This gives you a firm grip and good control over the blade.

Even though the handle is coated in clear varnish, we recommend keeping it as dry as possible. Wash the knife by hand and then dry it well. Because of this striking wood grain, each knife is unique. It is therefore possible that the knife you see in our photos will differ slightly from the knife you receive at home. These will only be minor deviations in the pattern on the handle. The material used and the quality standard are the same for each knife.
